Somewhere in America tonight, a family is probably sharing fajitas and margaritas in a Chili's booth. Brinker International most likely runs that restaurant itself, because it operates almost all of its Chili's and Maggiano's dining rooms directly. Guests pay for a sit-down meal that feels like good value, and they come back if it arrives the same way every time. Brinker keeps what is left after food, staff and rent. Chili's, the bigger brand, earns nearly all of it.
